    note: Optionally add minced peppers to onions and bacon at the start.

  1. Preheat oven to 450F.
  2. Pre-bake 9 inch pie crust pastry for 5 minutes.
  3. Fry bacon crispy and crumble. Cook diced onion until transparent, about 5 minutes. Drain.
  4. Place crumbled bacon and onion into pie shell. Add Gruyere or Emmenthal cheese on top.
  5. Combine eggs, half and half cream, bacon grease, nutmeg, and pepper. Pour over mixture in shell.
  6. Bake at 450 F for 10 minutes, then reduce to 350 F for 15-20 minutes.
